2 tbsp olive oil
1/2 chopped red onion
1 small orange bell pepper diced
Corn kernels cut from five ears of corn (about 4 cups)
1 1/2 tsp of kosher salt
1 tsp freshly ground black pepper
2 tbsp of julienned fresh basil

Directions:
Directions:
Heat olive oil over medium heat in a large sauté pan. Add the onion and sauté for five minutes, until onion is soft. Stir in the bell pepper and sauté for 2 more minutes. Add butter to the pan and allow to melt. Over medium heat, add corn, salt and pepper. Cook, stirring occasionally, for 5-7 minutes until corn just loses it's starchiness. Season to taste, gently stir in basil and serve hot
