¼ c. freshly squeezed orange juice
¼ c. freshly squeezed lemon juice (2 lemons)
¼ c. minced shallots/green onion
1 tbsp. honey
½ c. good olive oil
1 tsp. kosher salt
½ tsp. ground black pepper
6 c. baby arugula, washed and spun dry
⅛ seedless watermelon, rind removed ad cut in 1" cubes
12 oz. good feta cheese, ½" diced
1 c. (4 oz) whole fresh mint leaves, julienned

Directions:

Whisk together orange juice, lemon juice, shallots, honey, salt and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion.
If not using within an hour, store the vinaigrette covered in the refrigerator.
Place the arugula, watermelon, feta and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Adjust seasonings to taste ad serve immediately.

This is great summertime salad - so refreshing. You can substitute different greens, and use bottled juices (I won't tell Ina!)
