Large institutional size can of sliced beets
1 c. of liquid from above - discard the rest
1 c. cider vinegar
1 c. white sugar
1 tsp. whole cloves

Directions:
Add (to cup of beet juice), the vinegar, sugar and cloves. Bring to a boil and simmer for 5 minutes. Pour over sliced beets. Let stand and cool.

This is one of my mom's recipes. As a boy, I didn't know one could eat beets any other way until I encountered Mother Hanson. I had never enjoyed cooked beets or "Harvard" beets.
