Ingredients:
Ingredients:
6 medium cucumbers
2 c. of sugar
¼ c. salt (I use Kosher salt)
1 c. of cider (white OK) Vinegar
One red pepper (green OK)
2 T. celery seed
One large red onion (green OK)

Directions:
Directions:
Slice cucumbers, and soak in salt water over night. Drain and rinse well with cold water in the morning.

Cover with brine as follows: (6 cucumbers usually need 2 batches of brine) Stir 2 c. sugar and 2 T. celery seed then dissolve in 1 c. of vinegar. Cover cucumbers with this mixture. Add sliced or diced onions and green peppers.

It's best if the cucumbers sit in brine a few days before serving, but these will keep fresh for many weeks in the fridge.

Personal Notes:
This is a favorite of many and very simple. This was Allie's recipe.

Another version of Allie's recipe skips soaking in salt water but just adds 2 T. salt and 1 tsp. of celery seed before adding brine. I (Dad) find that soaking in salt water overnight works better...but who is the judge?
