Directions: |
Directions:Place dry couscous in bowl w/ water. The couscous will soak up the water in about 10 mintues. Meanwhile, blacken peppers over gas of stove (or in oven). Chop in bite sized pieces once blacked, discard seeds. Lightly cook the zucchini and asparagus in pan with a little oil. Toss all the vegetables with couscous. Pour dressing over top and toss well. Taste and season with salt, pepper, and red wine vinegar to taste. (I use quite a bit of red wine vinegar). |
